Classic Rice Pudding made with our classic coffee.

I'm not sure what it is about rice pudding that brings out the kid in all of us, but there's just something special about it. Maybe it's the creamy texture, or the way the sugar coats each grain of rice. Whatever it is, rice pudding is always a hit with kids and adults alike. In this recipe, we've updated this classic dessert by adding our classic 1936 Torrefacto Cubano Silver instant coffee . So good, no one will even realize it's healthy!

I've never been much of a fan of rice pudding, but I recently came up with a recipe that has made me a believer. It's creamy, subtly sweet, and perfectly comforting ,perfect for cold or hot days as you can serve it warm or cold. Ingredients


• 4 cups whole milk
• 1/2 cup raw medium-grain white rice
• Pinch salt
• 2 large egg yolks
• 1/3 cup sugar
• 2 tsp. 1936. Torrefacto Cubano Silver Instant Coffee
• 1-1/2 tsp. vanilla extract
• Sweetened whipped cream, for garnish
• 4 chocolate wafers or other crisp cookies, for garnish


Directions

• Step 1

Combine the rice, milk, and salt in a large, deep saucepan. Over high heat, while stirring constantly, bring to a boil. Cover and simmer on low heat for 15 minutes, stirring occasionally. Remove the lid and continue simmering the pudding, stirring frequently, for another 8 minutes, or until the rice is tender and the volume has decreased to about 3-1/2 cups. Keep in mind that the pudding shouldn't boil, but should gently simmer, and that constant stirring near the end of cooking is necessary to prevent scorching.

• Step 2
Combine the egg yolks, sugar, 1936 Torrefacto Cubano Silver Instant Coffee , and vanilla in a medium bowl and whisk until smooth. Add the rice mixture in increments, whisking constantly.

• Step 3

Return the contents of the bowl to the saucepan and scrape the sides if necessary. As the mixture thickens, it will coat the back of a spoon, so keep stirring and scraping the bottom of the pan with a wooden spoon until the mixture reaches this point, which should take about 1 minute.

• Step 4
Take the skillet off the stove. When serving the pudding, place a sheet of plastic wrap directly on the surface to keep a skin from forming.

• Step 5
As a garnish, top each serving with a dollop of sweetened whipped cream and a chocolate wafer, and serve warm, at room temperature, or chilled.
