Easy chocolate cupcakes

Ingredients for cupcakes
• 1 1/2 cups all-purpose flour
• 1/4 cup natural unsweetened cocoa powder
• 1 cup granulated sugar
• 1 teaspoon baking soda
• 1/2 teaspoon kosher salt
• 1 cup of warm water mixed with 1 1/2 teaspoons 1936 Torrefacto chocolate instant
• 1 tablespoon white vinegar
• 2 teaspoons vanilla extract
• 1/4 cup plus 2 tablespoons olive oil

With a rack in the centre, preheat the oven to 350°F. Put cupcake liners in a muffin tray.

The dry ingredients should be briskly whisked together in a large bowl until there are no more clumps of flour, cocoa powder, sugar, baking soda, or salt can be seen (cocoa tends to clump up).

Incorporate the wet ingredients: Combine the water and 1936 coffee granules, vinegar, vanilla essence, and olive oil in a separate bowl.

Mix the wet and dry components together: Only stir until they barely meld together. Do not over-beat! The mixture ought to be lumpy and thin.

Put the batter in the cupcake liners by ladling: About two-thirds of the way full, fill liners.
