Ingredients

For the Cake:


1 and 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
2 cups granulated sugar
1 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
2 large eggs
1 cup whole milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup hot water
2 tablespoons 1936 Torrefacto Chocolate Instant Coffee granules

For the Filling and Topping:


1 can (21 ounces) cherry pie filling
2 cups heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
Chocolate shavings or curls (for decoration, optional)

Instructions:


Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until well combined.

In a small bowl, dissolve the i1936 Instant coffee granules in hot water, then add it to the wet ingredients and mix until smooth.

Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.

Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

While the cakes are cooling, prepare the whipped cream. In a large mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Once the cakes have cooled, place one layer on a serving plate. Spread half of the cherry pie filling over the top.

Spread a layer of whipped cream over the cherry filling.

Place the second cake layer on top and repeat the process with the remaining cherry filling and whipped cream.

If desired, decorate the top of the cake with chocolate shavings or curls.

Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld together.
