Our delicious Coffee Pancakes
I'm not sure how it started, but at some point I began to think of coffee as an ingredient for pancakes. And it works! The coffee flavor is subtle but present, and it makes the pancakes a little bit richer and more complex than regular pancakes. If you're looking for a new pancake recipe to try, give this one a go!
Ingredients
INGREDIENTS
• 1 cup all-purpose flour
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1/2 teaspoon kosher salt
• 1 large egg
• 1 cup buttermilk shaken
• 1 tablespoon 1936 Torrefacto Instant Coffee (any of our 6 delicious flavours !)
Directions
• Step 1
To keep the pancakes warm while you cook the rest, preheat the oven to 250 degrees Fahrenheit.
• Step 2
In a medium bowl, sift together the flour, baking powder, baking soda, salt and sugar. Cream the egg and buttermilk together in a large measuring cup (or a small bowl).
• Step 3
Our instant coffee should then be whisked in until thoroughly combined. It's best to do this in two batches, but either way, add the liquids to the dry and stir until they're just incorporated. There should be a few medium-sized lumps in the batter.
• Step 4
Start by melting 1 tablespoon of butter in a griddle or cast-iron skillet set over medium low heat. A 1/4 cup measure of batter will do for adding to the hot pan and waiting for bubbles to form on the edges and in the middle. Flip. Flip, and continue cooking until the other side is golden. Put in the oven until you've used up all the batter. Put out some softened butter and some warm maple syrup.
