2 cups old-fashioned oats
1 cup crispy rice cereal
1/2 cup chopped nuts (such as almonds or walnuts)
1/4 cup ground flaxseed
1/4 cup honey
1/4 cup almond butter (or any nut butter of your choice)
1/4 cup coconut oil
1/4 cup brown sugar, packed
1 tablespoon instant coffee granules (dissolved in 1 tablespoon hot water)
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup dark chocolate chips (optional)

Prep the Pan:
Line a square baking pan with parchment paper, leaving some overhang on the sides. This will make it easier to lift the bars out later.

Mix Dry Ingredients:
In a large mixing bowl, combine oats, crispy rice cereal, chopped nuts, and ground flaxseed. Mix well.

Prepare Wet Ingredients:
In a saucepan over medium heat, combine honey, almond butter, coconut oil, brown sugar, dissolved instant coffee, vanilla extract, and salt. Stir until the mixture is well combined and starts to bubble.

Combine Wet and Dry Ingredients:
Pour the wet mixture over the dry ingredients. Stir until everything is well coated.
