Our creamy coffee creme brûlée

Here's our recipe for a delicious Crème Brûlée made with 1936 Torrefacto instant coffee:

1936 Coffee Crème Brûlée


Ingredients:
2 cups heavy cream
1 tablespoon 1936 instant coffee granules (any flavour but we like Vanilla)
1 vanilla bean (or 1 teaspoon vanilla extract)
5 large egg yolks
1/2 cup granulated sugar (plus extra for caramelizing)
Pinch of salt
Instructions:
Preheat Oven:
Preheat your oven to 325°F (160°C).

Infuse Cream:
In a medium saucepan, combine the heavy cream, 1936 instant coffee granules, and the seeds from the vanilla bean (or vanilla extract). Heat over medium heat until it starts to simmer. Remove from heat and let it sit for about 10 minutes to infuse the flavors.

Prepare Egg Mixture:
In a mixing bowl, whisk together the egg yolks, 1/2 cup of granulated sugar, and a pinch of salt until well combined and slightly pale in color.

Combine Mixtures:
Slowly pour the warm cream mixture into the egg mixture, whisking constantly to prevent the eggs from curdling.

Strain:
Strain the mixture through a fine-mesh sieve into a large measuring cup or another bowl to remove any cooked egg bits or lumps.

Pour into Ramekins:
Place 6 ramekins in a baking dish. Divide the custard mixture evenly among the ramekins.

Bake:
Pour hot water into the baking dish until it reaches halfway up the sides of the ramekins. Bake in the preheated oven for 40-45 minutes, or until the edges are set but the centers still have a slight jiggle.

Cool:
Remove the ramekins from the baking dish and let them cool to room temperature. Then, refrigerate for at least 2 hours, or overnight.

Caramelize Sugar:
Just before serving, sprinkle a thin, even layer of granulated sugar over the top of each chilled custard. Use a kitchen torch to caramelize the sugar until it is golden brown and crisp. Alternatively, you can place the ramekins under a broiler for a few minutes, watching closely to prevent burning.

Serve:
Allow the caramelized sugar to harden for a minute or two before serving.
