Ingredients:
-7 oz (200g )chopped dark chocolate with at least 70% cocoa solids
-1/2 cup of thick cream
-2 teaspoons of 1936 Chocolate Instant Coffee.
-1/fourth cup unsalted butter
For coating, use cocoa powder or powdered sugar.
Instructions:
In a heat-resistant bowl, add the chopped dark chocolate and let it there.
The heavy cream should be heated in a small saucepan over medium heat until it barely begins to simmer. Get rid of the heat.
Our instant coffee granules should be added to the boiling cream and thoroughly mixed in.
Over the chopped dark chocolate, pour the hot coffee cream mixture. Give it a minute to settle so the chocolate can melt.
Once the chocolate has melted completely and the ganache is smooth, gently whisk the mixture.
The unsalted butter should be mixed completely after being added to the ganache.
Refrigerate the bowl for at least two hours, or until the ganache is stiff. Cover the bowl with plastic wrap.
Remove the ganache from the refrigerator once it has become stiff. To divide out the ganache, use a teaspoon or melon baller.
Each part should be rolled between your palms to create a smooth truffle ball.
To equally coat the truffles, roll them in cocoa powder or icing sugar.
Refrigerate the covered truffles for a further 30 minutes to allow the coating to harden.
When the truffles are finished setting, place them in an airtight container and place them in the refrigerator until you're ready to serve.They keep up to 2 weeks.
